Two new polls for workshops

Yes I know, I go tanning with my polls and my workshops, but I gotta do to be on me not me plant, and to better serve the most of you.

I describe two different workshops:

tame the autoclave and

Canned 301

tame the autoclave

This workshop is for people who know how to make canned food acids but are reluctant to purchase an autoclave. Or with people who encounter problems or have doubts about its operation.

We will present the latest Mirro (which contains 16 jars of 500 ml and 5 one-liter bottles), my old Presto 21 liters, and the All American that Louis-Charles will lend us (thank you Louis-Charles).

We would run into the demonstration, and there would be a lot of time expected to communicate and try to find solutions to problems.

This 4-hour workshop costs $ 50 and be held with 10 people. It would place the afternoon of the weekend in the beautiful kitchen in the Nursery School of the Souris Verte, St-Marthe-sur-le-Lac.

Canned 301

This workshop is canneux has very advanced. It would be given by Denis canneux of the Naked Lunch Gastronomy.

Denis operates one of the few artisanal canning in Quebec and we offer this wonderful workshop. Denis is a kind of pioneer of canned craft in Quebec. It started with class, skill, and determination.

This workshop is for people interested in understanding how to quantify, measure and define a scale of autoclaving to ensure the safety of a canned product.

Outline:

- microbiological aspects related to the canning
- Heat treatments: required equipment, testing heat distribution, heat penetration testing, definition of a sterilization, cooling, role and vacuum measurement, management of critical factors
- Demonstration of a penetration test and calculation of heat sterilizing value in real time.
- Definition of the scheduled process

Cost per participant: $ 50 minimum
Number of participants: 8
It would place the afternoon of the weekend.
The workshop would be in the canning of the Naked Lunch Catering in Ste-Sophie in the Laurentians (45 minutes north of Montreal)
Prerequisite: good knowledge of basic processes of canning, be curious
